The interior oven chamber measures 25.5"W x 30.5"D x 26.25"H, and the interior proofer chamber is 26.5"W x 36.5"D x 26.333". The oven chamber has a capacity of (6) 18"x26" pan capacity and the proofer is (18) 18"x26" pan capacity. This model is constructed of 16 gauge stainless steel exterior, and the oven interior is constructed of 16 gauge stainless steel. The proofer chamber is manufactured of 20 gauge stainless steel. Every JA series unit features its patented bidirectional fan system. How this works is the fan spins one direction for 2.5 minutes. It will now stop for a few seconds and finally reverse for 2.5 minutes. Pushing & pulling air across the product. Doyons ovens are famous for their steam system.
